What’s for Dinner?

Well, we have reached the last week of our semester and we could not be happier. To celebrate, we decided to make an extra yummy dinner to last us for the rest of the week!

What made the menu for this special occasion? Some of our favorite things:

-Parmesan Crusted Chicken

-Roasted Broccoli

-Cheesy Garlic Scalloped Potatoes

Here’s how we made everything, and in the order that we made it to ensure that everything came out pretty close to the same time. Enjoy!

First: Cheesy Garlic Scalloped Potatoes

Sometimes those creamy and perfect scalloped potatoes can be really intimidating. Luckily we found a very easy recipe that we modified some to make delicious potatoes!

Prep time: 15 minutes          Cook time: 45 minutes

Here’s what you’ll need:

1/4 cup butter

1/4 – 1/2 cup of diced onion

2 Tbsp all-purpose flour (forgot it in the pic! Sorry!)

1 3/4 cup milk

2 Tbsp garlic

2 1/4 cup shredded cheese

7-8 medium size gold potatoes (thinly sliced)

Cajun seasoning and salt and pepper for taste

  1. Preheat the oven to 375 degrees (F). Then start by thinly slicing your potatoes. We sliced them thin enough to where you could almost see through them just to make sure they would cook through.
  2. Next, spray a 13×9 casserole pan with cooking spray or butter the pan. Then layer the potatoes in the pan in three layers. Between every layer, season with some cajun seasoning, salt, pepper, and garlic for extra taste. potatoes-2.jpg
  3. Sauce: Melt the butter in a medium saucepan over medium heat. Then add the diced onions and let them cook for 3-5 minutes until soft. Next, stir the flour into the butter and onions then add the milk. Stir sauce on medium heat until it starts to bubble and thicken. Then remove it from the heat and stir in the first 2 cups of shredded cheese.potatoes-3.jpg
  4. Next, pour the sauce over the potatoes and then lightly shake the pan back and fourth to make sure the sauce reaches through every layer of potatoes. Then put in the oven for at least 45 minutes or until the potatoes are fork tender.
  5. When the potatoes are almost done, take them out and add the rest of the cheese that is left (1/4 cup). Put back in the oven for about 5 minutes until the cheese melts. Then you’re done!

Second: Roasted Broccoli

This broccoli is pretty much our go-to veggie to cook during the week. We probably fix it every week but if not it’s definitely every other week! It is a simple recipe and delicious every time.

Prep time: 10 minutes       Cook time: 30 minutes

Here’s what you’ll need:

2 or 3 heads of broccoli

olive oil

garlic, salt and pepper

  1. First, preheat the oven to 375 degrees (F).
  2. Cut up the broccoli into florets.
  3. Pour the broccoli onto a baking sheet. Bring all of the broccoli towards the middle of the pan where they are touching and drizzle olive oil over broccoli until it is lightly coated. Toss the broccoli and then sprinkle desired amount of garlic, salt and pepper (we usually use about half a tablespoon of garlic and just salt and pepper for taste). broccoli 2
  4. Roast the broccoli in the oven for about 30 minutes or until the edges start to get slightly brown. The crispiness makes them that much more delicious!broccoli 3

Third: Parmesan Crusted Chicken

Whenever we can’t think of what we are in the mood to cook during the week, this chicken always seems to sound like a good option! It’s so tender and has great flavoring from only four ingredients!

Prep time:  10 minutes        Cook time:  25 minutes

Here’s what you’ll need:

3 or 4 chicken breasts

1/2 cup of mayonnaise

1/4 cup parmesan cheese

4-6 tbsp breadcrumbs

Salt and pepper to taste

*Optional* – garlic powder and cajun seasoning for extra taste

  1. Preheat oven to 425 degrees (F).
  2. Wash chicken breasts under warm water. Then cut the chicken breasts in half so they are thinner and will cook through easier.
  3. Mix together mayonnaise and parmesan cheese in a bowl. Then lightly season chicken breasts with salt and pepper for extra flavor before putting mayonnaise mixture on top. *Here is where you can add garlic and cajun seasoning to the chicken also.*
  4. Get a spoon and cover each chicken breast in the mayonnaise mixture. *You may not use all of the mixture if you have smaller chicken breasts.*
  5. Next, take a tablespoon measure and put about 1 tablespoon of bread crumbs over each piece of chicken.
  6. Put chicken in the oven for about 25 minutes. Then cut into the thickest piece to make sure there is no pink in the middle. If there is some pink, put back in the oven for another 5 minutes. *The cooking of this chicken can vary every time for some reason! For us, it’s never right at 25 minutes. It’s sometimes a little less, sometimes a little more. Just watch it!*

What are we watching?

Yes, we know we are college students and that means that we have homework and studying. And believe us, we do! But that also means that in between all of that studying there are many, MANY shows that we have come to love and eventually re-watch multiple times. Here are the ones we are watching at the moment!

The Office, Parks and Recreation, and Friends

How do y’all expect us to pick a favorite out of these three? We literally watch them over and over. Once we finish the any three of these series, we immediately re-start them. We can actually quote most of the episodes and will never get tired of them. If you haven’t watched any of these three amazing shows, start one NOW!

Last Man Standing

Tim Allen stars in this family comedy as Mike Baxter. The show follows him and his wife raising their three daughters and all the challenges and fun that that entails. This sweet sitcom is one we could watch over and over again.

New Girl

Get ready to giggle! When a quirky teacher Jess moves in with three unlikely male roommates, they experience life together in weird and random ways while trying to figure out their 30-year-old “adult” selves. Between their careers, love-lives, and mess-ups things are always interesting.

Riverdale

This is not your typical high school drama. A killer, the Serpents, and secrets; Oh my! One of the main draws to this show for us was Cole Sprouse a.k.a. one of our childhood heartthrobs. We were excited because we got to see him in such a different role from what we had seen before and so far we love his dark side! Definitely a great murder mystery for high school age and up and we can’t wait to watch season two!

Famous in Love

Talk about drama! And the best kind; Hollywood drama! This show follows an ordinary college girl with dreams of becoming a famous actress as she lands her first big movie role. We watched the first season on Freeform last year and the second season recently started airing this month. We always look forward to watching it every Thursday morning on Hulu!

Scream

This one’s scary! It will definitely will get your blood pumping. It is pretty much a mini scary movie every episode. So far there are only two seasons available to watch on Netflix, the third season is still being currently aired on television. This one is also not for the lighthearted when it comes to goriness. The show follows Emma, a teenage girl, who is supposedly being tormented by Lakewood legend killer Brandon James. She and her friends try to uncover the secrets of the town as well as her own family secrets. The non-stop suspense is what kept us clicking “Next Episode”.

Sons of Anarchy

One of the main reasons to watch this show is honestly just to look at Charlie Hunnam a.k.a Jax Teller. You would definitely need to be at an older age to watch this show (17 and up) because it is very gruesome, has a lot of violence as well as sexual content. The show follows the story of a California motorcycle club during their gun runs, cartel conflicts, family issues, but also their strong brotherhood. We enjoy the inside look at a world that we knew absolutely nothing about and the strong bond between friends and how much they look out for one another.

Daily Beauty Essentials

Our beauty routine is a big part of our life and one of the the major things we make sure we take care of is our skin. Because the best foundation for your face is healthy and glowing skin! So here are our favorite products for our skin as well as a few of our favorite makeup essentials.

1. Face Exfoliator

We have found that both of these products are gentle enough to use once a day. We use ours at night!

Lauren’s pick: St Ives Fresh Skin Apricot Scrub

I have never had horrible acne but I have had problem areas. This exfoliator has kept my acne to a minimum other than the occasional blemish!

Rachel’s pick: Clean & Clear Deep Action Exfoliating Scrub

Exfoliating is one of my favorite things to do and with this, I can do it everyday! This product has kept my skin clear for the past 8 months and I will continue to use it.

2. Moisturizer

Lauren’s pick: Mary Kay Timewise Age-fighting Moisturizer

My skin is combination to oily and this moisturizer is formulated perfectly for that. It is part of the Time Wise collection ak.a. their age-fighting line. They always say you can never start fighting age too soon!

Rachel’s pick: Avon Nutra Effects Day Lotion

This is a very basic moisturizer and is thick enough to just use a few dots to cover your entire face. I use it once a day at night after I use my exfoliator and it keeps me from having those annoying dry spots!

3. Body Lotion

Lauren’s pick: St Ives Renewing Collagen Elastin Body Lotion

This is a recent favorite of mine. I came across it while looking for a more moisturizing lotion than what I was using at the time. The collagen in it helps keep my skin firm and it smells like heaven!

Rachel’s pick: Jergens Hydrating Coconut

Seriously, a life saver for super dry skin! Over the winter months, my legs started getting more dry than usual and my sister Ruthie recommended I find something with coconut oil. I found this at Walmart and no joke, it healed my legs within one week!

4. Concealer

We both use the same one! The shade is Fair. 

Lauren’s pick: Covergirl Ready, Set, Gorgeous

I suffer from extreme dark circles. I mean, extreme! I was constantly trying to find an affordable concealer to cover them and came across this one. I have been using it for a year now and don’t see myself changing that anytime soon!

Rachel’s pick: Covergirl Ready, Set, Gorgeous

After many years of trying to find the perfect, creamy concealer, I found this one! This concealer has great coverage for everywhere you need it and even gets the job done for those stubborn red spots. If it’s a “no-makeup” kind of day, I still always wear this!

5. Eyebrow Pencil

Lauren’s pick: Maybelline Total Temptation Brow Definer in Soft Brown

I never go a day without filling in my eyebrows! This is the perfect shade for me and it comes with a spoolie, which is a plus.

Rachel’s pick: Nyx Eyebrow Powder Pencil in Soft Brown

I actually just recently (about 4 months ago) started filling in my eyebrows. This is the first eyebrow pencil I have ever used and it works really well for me!

6. Mascara

Lauren’s pick: Loreal Voluminous Original & Tarte Mermaid Lash Limited Addition

Mascara is my favorite makeup product so I have tried a ton and this is by far my favorite! I also curl my eyelashes and recently received my favorite eyelash curler from my sister Lexi. This is more of a splurge but I definitely think it’s worth the money!

Rachel’s pick: Maybelline Lash Sensational

I have blonde and non-existent eyelashes without mascara! Like concealer, it is the only other must have product for my “no-makeup” days. I really like several different mascaras but this is the one I always fall back on and have used for the past year!

7. Eye Shadow Pallet

Lauren’s pick: Naked Petite Heat by Urban Decay

This all-matte pallet is full of warm, orange tones which I am loving right now! You can do an everyday look or go dramatic with this pallet. I haven’t used another pallet since I got it!

Rachel’s pick: Tartelette Flirt Pallet by Tarte

This pallet is new to me! My sister Ruthie gave this to me for my birthday and I have used it everyday since. It’s warm tones make a great look for day or night and are getting me excited for summer!

8. Bronzer/ Blush/ Highlighter Trio

Lauren’s pick: Maybelline Master Contour

Honestly, I took this from my sister Lexi without her knowing (sorry Lex!) and she still doesn’t. I use the bronzer everyday and it’s the perfect shade. It definitely gives me that summer glow!

Rachel’s pick: Rimmel London Coral Glow Sculpting Pallet

This was an awesome find at Ulta in the clearance items! My mom and I both got one and love it. This trio completes my everyday makeup routine and really helps make my cheekbones more visible!
